Indian Fry bread / Navajo Tacos

Indian Fry bread / Navajo Tacos
Ingredients:
4 cups of flour
1 tbs. baking powder
1 teaspoon salt
2 tbs. powdered milk
1 ½ cups warm water
1 cup shortening
Extra flour to flour your hands
Directions:
Put flour in bowl, add baking powder, salt and powdered milk. Mix.
Mix in warm water to form dough.
Cover hands in flour.
Knead dough by hand until soft but not sticky. Cover with a cloth and let stand for 15 minutes.
Shape dough into balls about 2 inches across then flatten by patting and stretching the dough.
Melt shortening about an inch deep in frying pan. When hot put dough in pan. Fry one side till golden brown, then turn and fry the other.

What You'll Need
- 1 package of frozen spinach-artichoke dip (we love Traders Joe's)
- 1/4 cup frozen chopped spinach (defrosted)
- 1 clove fresh garlic, crushed
- 1/4 cup shaved Parmesan cheese
- Salt, to taste
- Celery, bell pepper strips, tortilla or pita chips (optional)
Let’s Do It
- Prepare frozen spinach-artichoke dip as instructed on the package, and then transfer to a microwave-safe mixing bowl
- Add spinach, garlic and salt (to taste), and stir together
- Heat in microwave for 30 seconds
- Top with Parmesan cheese shavings, and serve with celery, bell pepper strips and tortilla chips
Mini Cream Puffs Recipe

what you’ll need
makes about 40 puffs
- 2 (3.5 oz) packages instant vanilla pudding mix
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup unsalted butter
- 1 cup water
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- powdered sugar for garnish
let’s do it
- mix together pudding mix, cream and milk
- cover and refrigerate to set
- preheat oven to 325 degrees
- bring water and butter to a rolling boil in large pot
- mix flour and salt and add to pot
- stir with wooden spoon until mixture forms a ball (mix quickly to avoid lumps)
- add to stand mixer with beater attachment
- pulse a few times to cool mixture slightly
- beat in eggs one at a time, mixing well after each
- drop by teaspoon onto baking sheet lined with parchment paper
- bake 30-35 minutes until golden brown and centers are dry
- fill with pudding mixture with a pastry bag once cool
- sprinkle with powdered sugar

- 1 bag frozen edamame

- garlic chili
- teaspoon garlic powder
- 1 teaspoon chili powder
- ¼ teaspoon salt
- cilantro lime
- 1 lime

- ¼ teaspoon salt
- citrus salt
- 1 lemon zest
- 1 orange zest
- 1 lime zest
- 2 tablespoons kosher salt

- prepare edamame per package instructions
- toss in seasoning mix of choice

Roasted Chickpea Snack Recipe

what you’ll need
- 2 cans chickpeas drained and rinsed
- 2 tablespoons + 1 tablespoon light olive oil or canola oil
- 1 teaspoon kosher salt
- 1 ½ teaspoons ground cinnamon
- 2 tablespoons brown sugar
- 2 tablespoons honey
let’s do it
- put chickpeas between two paper towels on baking sheet
- let dry for 30 minutes
- preheat oven to 350 degrees
- toss chickpeas, olive oil and salt in bowl
- lay out chickpeas in single layer on parchment paper lined baking sheet
- cook 30 minutes or until golden brown and crisp
- mix olive oil, cinnamon, sugar and honey in small saucepan
- heat mixture through
- put chickpeas in bowl and add mixture
- coat thoroughly
- cool and serve

Baked Eggs In a Basket Recipe

what you’ll need
- 2 slices of bread
- butter
- 2 large eggs
- baking sheet
- bow tie cookie cutter
let’s do it
- place baking sheet in oven
- preheat oven to 350 degrees
- cut bow tie from each slice of bread using cookie cutter
- remove baking sheet from oven and grease lightly with butter
- place bread and bowtie cutouts separately on hot baking sheet
- crack egg into cutout and pierce yolk
- bake 8 minutes or until egg is set
- serve immediately
