Baked Yogurt with Berries

baked yogurt dessert with blueberries   (ANY BERRY) recipe

what you’ll need

serves 6
  • ¾ cup blueberries
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 1 pinch nutmeg
  • vanilla bean
  • 6 ounces vanilla yogurt
  • 8 ounces heavy whipping cream
  • 8 ounces sweetened condensed milk
  • 6 small ramekins

let’s do it

  • preheat oven to 250 degrees
  • combine blueberries, sugar, cinnamon and nutmeg in microwave-safe bowl
  • heat in microwave 1 minute
  • cover with plastic wrap and cool in refrigerator
  • put yogurt in medium mixing bowl
  • split vanilla bean and scrape seeds into yogurt
  • whisk until mixed
  • whisk in heavy whipping cream
  • whisk in sweetened condensed milk
  • put mixture into refrigerator to cool
  • spoon cooled blueberry mixture into 6 ramekins (reserve small amount for garnish)
  • pour yogurt mixture on top of blueberry mixture–do not stir
  • place ramekins on cooking sheet
  • bake 15-20 minutes until just set
  • turn off oven and leave door slightly open
  • allow yogurt to cool in oven
  • drizzle with remaining blueberry mixture
  • cover ramekins with plastic wrap
  • refrigerate for 3 hours before serving

Fruit Smoothie Frozen Pack

what you'll need

makes 8 packs
yogurt cubes:
  • 1 cup fresh berries
  • 2 cups plain Greek yogurt (or your favorite flavor)
  • 2 ice cube trays
smoothie packs:
  • 8 cups fresh fruit (pineapple, strawberries, bananas, blueberries, etc.)
  • yogurt cubes
  • 8 resealable bags
smoothies:
  • 1 smoothie pack
  • ½ cup crushed ice
  • 1 cup milk
  • blender

let’s do it

yogurt cubes:
  • place 2-3 berries in bottom of each compartment of ice cube trays
  • fill trays with yogurt
  • place 2 more berries on top of each cube and freeze
  • release yogurt cubes from ice cube tray once frozen
  • place 3 yogurt cubes in each resealable bags
TIP: make extra frozen yogurt cubes to keep on hand for a quick snack
smoothie packs:
  • wash and cut fresh fruit
  • add 1 cup of fruit to resealable bags with yogurt cubes
  • seal bag and lay flat
  • place in freezer until needed
smoothies:
  • remove 1 smoothie pack from freezer
  • empty smoothie pack ingredients into blender
  • add ice and milk
  • blend until smooth
  • pour into glass and drink

Frozen Raspberry Yogurt Pops

Frozen Raspberry Yogurt Pops

Cook Time: 10 min
Difficulty: Easy

Ingredients 

2/3 cup turbinado sugar
2/3 cup water
4 cups fresh raspberries
1 cup plain yogurt (nonfat)
2 tablespoons lime juice

Directions


In a small saucepan, make a simple syrup by stirring together the water and sugar and cooking over medium heat until the sugar is dissolved. Remove from heat and allow to cool in the refrigerator until cold (about 1 hour).
In a food processor, add raspberries and puree until smooth. Pour raspberry puree into a fine mesh strainer placed over a large bowl with a pour spout. Using the back of a spoon, press the puree through the strainer into the bowl – leaving the seeds in the strainer. Discard seeds.
Add the yogurt, lime juice and cold simple syrup to the raspberry puree and whisk to combine.
Divide mixture among a 10 capacity ice pop mold. Top with the mold cover and insert ice pop sticks.
Freeze overnight or until pops are firm.

BLACKBERRY FROZEN YOGURT

servings: 8

30 minutes + yogurt freezing time 2-4 hours



Ingredients

  • 5 cups fresh or frozen blackberries **ANY type of berry works****
  • 1/3 cup water
  • 2 tablespoons lemon juice
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 4 cups (32 ounces) fat-free frozen vanilla yogurt

Directions

  • In a food processor, puree blackberries, water and lemon juice. 
  • Strain blackberries, reserving juice and pulp. Discard seeds. 
  • Return pureed blackberries to food processor; add sugar and vanilla. 
  • Cover and process until smooth.
  • In a large bowl, combine yogurt and blackberry mixture. 
  • Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer’s directions. 
  • Refrigerate remaining mixture until ready to freeze. 
  • When yogurt is frozen, transfer to a freezer container; freeze for 2-4 hours before serving.

If you like the tangy taste of yogurt you'll love this low-fat homemade frozen treat made with a combination of Greek yogurt and plain yogurt and real vanilla bean. 

It's National Ice Cream Month and to celebrate I've been playing with my new ice cream maker. This frozen yogurt is so easy to make. This is best served soft and topped with fresh fruit. Serve it right out of the ice cream maker or let it thaw a few minutes before serving.


Homemade Low Fat Vanilla Bean Frozen Yogurt

Ingredients:

  • 1 1/2 cups plain whole-milk yogurt (I used Dannon All-Natural)
  • 2 1/2 cups plain fat free Greek yogurt, I used Chobani
  • 1 vanilla bean
  • 1/2 cup sugar
  • 3 tbsp honey
  • fresh fruit to top (extra points) use kiwi, blueberries, strawberries

Directions:

Combine sugar and the seeds from the vanilla bean in the blender and blend until fine.

Whisk both yogurts, sugar and honey in a bowl until combined.  


Pour into an ice cream maker.


Freeze according to the manufacturer's instructions.

Tangy Grapefruit Yogurt Popsicles {Recipe}

  • 5 oz. Greek Yogurt
  • 1 oz. Buttermilk
  • 2 large grapefruits
  • 6 tbsps. organic sugar
  • 3 tbsps. water
Directions:
  1. In a small bowl combine the Greek yogurt and the buttermilk. Set aside.
  2. Juice each of the grapefruits and strain the liquid through a strainer. Twice.
  3. In a small sauce pan heat the grapefruit juice, water and sugar on low until the sugar is all melted. Approximately 5 minutes.
  4. Do not let the liquid boil.  Remove from heat and allow it to cool.
  5. Combine the grapefruit juice mixture and the dairy mixture with a whisk, till it is completely smooth.
  6. Fill each popsicle mold with the mixture. Fills approximate 8 to 10 popsicles depending on the size.
  7. Freeze for 6 hours and enjoy!
