Creamed Corn Recipe
4 lbs. frozen sweet corn
2 8 oz blocks cream cheese, diced into 1 inch squares
1 stick (4 oz) of salted butter
3/4 cup heavy whipping cream
4 tablespoons of sugar
1 teaspoon black pepper
1/2 teaspoon salt
Directions
Throw all the ingredients, without any sort of ceremony or circumstance, into a crockpot on medium or low for at least 4 hours. If you need it done faster, cook it on the stove or on high in the crockpot, but be prepared to sacrifice a little of the savory goodness that results when corn is allowed to soak in dairy for hours. All of the cream cheese pieces should be completely melted and will easily break down and combine with the cream and butter to make the ‘gravy’.
Do not over-salt. There is plenty of salt in the butter and cream cheese. Over-salting will ruin this dish.

Cheesy Cauliflower Patties

Cheesy Cauliflower Patties
Ingredients
1 large | head of cauliflower |
2 large | eggs |
1/2 c | cheddar cheese |
1/2 c | panko bread crumbs |
1/2 tsp | cayenne pepper (less or more to taste) |
salt | |
olive oil |
Directions

Cut cauliflower into florets and cook in boiling water until tender about 10 minutes.

Mash the cauliflower while still warm.

Stir cheese, eggs, panko, cayenne and salt to taste.

Coat the bottom of a griddle or skillet with olive oil over medium-high heat.

Form the cauliflower mixture into patties about 3 inches across.

Cook until golden brown and batch warm in the oven while you cook the rest.Cheesy Artichoke Bread

Cheesy Artichoke Bread
Ingredients:
1 loaf of Sourdough, French or Italian bread, halved.
1 16 oz bag of frozen Artichokes, thawed
3 cloves of garlic
2 green onions
1 cup of Mayonnaise
4 oz. of Cream cheese
1 cup Mozzarella, shredded
1/2 cup Parmesan cheese
1 tsp of pepper
salt only to taste, probably won't need.
Directions:
- Preheat oven to 375F.
- In a food processor, pulse the garlic and onion until minced. Add in artichokes and pulse until chopped.
- Add in the rest of the ingredients and process to thoroughly mix.
- Generously spread onto each half of bread.
- Place bread on a large sheet pan and bake for 20-25 minutes. Broil for another 4-5 minutes until top is lightly browned.
- Slice and serve.
