Apple Butter in Slow Cooker

Apple Butter in Slow Cooker


Using  slow cooker to make homemade apple butter is genius.

Use up extra apples & makes house smell amazing.

Finished product freezes.

You can skip the sugar & leave peels on IF they are NOT
sprayed w/ pesticides. Unless Granny Smith and too sour.

(If you don't peel your apples, use an immersion blender when they're cooked down to make the apple butter smooth.)


Prep: 40 minutes
Cook: 6 hours
Cool: 1 hour

Ingredients:

12 cooking apples, peeled, cored and sliced (14 cups)
2 cups sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice

Directions:

1. Place apple slices in a 5- or 6-quart slow cooker. Stir in sugar, cinnamon, cloves and allspice.

2. Cover; cook on high-heat setting for 4 hours. Stir. Uncover and cook on high-heat setting
2 to 2 1/2 hours more or until apples
are very tender and most of the liquid has evaporated. Cool mixture at least 1 hour or cover and chill overnight.
Process with an immersion blender or run mixture through a food mill*.

3. Ladle apple butter into half-pint freezer containers, leaving a 1/2-inch head space.
Seal and label. Store 3 weeks in refrigerator or for 1 year in freezer.

Makes 4 half-pints.


* Mixture may also be processed, 1/2 at a time, in a blender or food processor.


Mixture processed this way will be slightly lighter in color and thinner in consistency.

Sweet & Sour Pork Crock Pot Recipe

2-3 pound lean pork roast
1 cup granulated sugar (seems like a lot, but it mellows out)
½ cup white vinegar
4 tablespoons soy sauce
4 tablespoons ketchup
20 ounce can crushed pineapple (drained)

Brown the pork roast on all sides and put it in your slow cooker. Mix everything else and bring it to a boil, then pour it over the meat.

Cook on low for 4 hours or until very tender (spoon the sauce over the meat every once in awhile).

At the very end of the cooking time, thickened the sauce a little with a slurry of cornstarch and water (right in the crockpot). To serve, slice the meat and spoon a little of the sauce over it; it's great with rice. 

 On day two, pull this pork apart and mix it with a little of the sauce (make sure you include some pineapple out of the sauce). While its still cold, roll it into a large burrito size tortilla (folding in all the ends) and then brown the whole sandwich in a little butter until its piping hot.

Sweet-Sour Meatballs Slow Cooker-Crock Pot

1 (12 fluid ounce) can or bottle chile sauce

2 teaspoons lemon juice

9 ounces grape jelly

1 pound lean ground beef

1 egg, beaten

1 large onion, grated

salt to taste

Directions


1.Whisk together the chili sauce, lemon juice and grape jelly. Pour into slow cooker and simmer over low heat until warm.

2.Combine ground beef, egg, onion and salt. Mix well and form into 1 inch balls. Add to sauce and simmer for 1 1/2 hours.

Sweet Baby Ray's Crockpot Chicken

4-6 chicken breast
1 btl Sweet Baby Ray's sauce
1/4 c vinegar
1 tsp red pepper flakes
1/4 c brown sugar
1 tsp garlic powder
Mix everything but chicken
Place chicken in crockpot (frozen is ok)
Pour sauce mixture over chicken
Cook on low 4-6 hours
