Canning Italian Meat Sauce

Sauce with Italian Sausage

15 lbs tomatoes
1 1/4 lbs ground beef or sausage
2 1/2 cloves garlic, minced
1/2 cup chopped onions
1/2 cup red bell peppers
1/2 lb fresh mushrooms, sliced 
2 tsp salt
1 tbsp dried oregano
2 tbsp dried parsley
1 tsp black pepper

Yield:  About 5 pints (Depends on how much you reduce the sauce)
Prepare tomatoes by choosing to peel or not, then dicing the tomatoes. If you leave the skins on you can use an immersion blender on the tomatoes to break down the skins.
Saute the ground beef or sausage until brown. If you use Italian sausage cut into chunks after browning. Drain the ground beef to eliminate some of the fat. Set aside the meat. In a saucepan with a trace amount of olive oil add garlic, onion, red pepper, and mushrooms.  Cook until vegetables are tender. Combine with tomato pulp in large sauce pot. Add spices and cook to a boil. Simmer, uncovered until the initial volume has been reduced by half. Stir frequently to avoid burning.

Prepare hot pints by adding 1/2 cup of ground beef or 5 pieces of sausage to the bottom of the jar. Ladle into pints the sauce from the pot, leaving 1-inch headspace.  Remove air bubbles and adjust headspace if needed. Wipe rims of jars with a dampened vinegar clean paper towel.  Adjust lids and process.

Processing in Pressure Canner at 10 lbs of pressure for weighted gauge and 11 lbs at dial gauge for 60 minutes for pints. If you do quarts process for 70 minutes.

Butter Flavor Pansy Flowers


Pansy Butter

1/4 cup cut fresh petals (use scissors)
2 sticks sweet unsalted butter, room temperature


Cut with scissors the pansy petals. In the bottom of a small bowl or ramekin line with wax paper. Choose the prettiest pieces and lay them upside down on the bottom. Fold the remaining pieces into softened butter. Gently spoon then spread the butter to fill the bowl. Cover with plastic and put butter in the refrigerator.   

When you are ready to serve invert the butter, remove the wax paper and serve on a pretty plate.


For the pansy's you need to just clean them before using them in the recipe. Here is the process; 

Cleaning Edible Flowers:
Shake each flower to dislodge insects hidden in the petal folds.
After having removed the stamen, wash the flowers under a fine jet of water or in a strainer placed in a large bowl of water.
Drain and allow to dry on absorbent paper. The flowers will retain their odor and color providing they dry quickly and that they are not exposed to direct sunlight.

Buttermilk Make At Home DIY EASY


To make Fake Buttermilk, simply mix:

1 Tablespoon White Vinegar or Lemon Juice

1 Cup Whole Milk
LET SIT for 545 minutes

SERVES 4

  • 1 lb lean ground beef
  • 1/2 medium onion, chopped
  • 1 (10 1/2 ounce) can condensed cream of celery or cream of chicken soup (undiluted)
  • 1 16 oz package frozen tater tots
  • 1 cup shredded cheddar cheese
  • salt & pepper
  1. Preheat oven to 375 degrees.
  2. Brown ground beef. season with salt & pepper.
  3. Add chopped onion, cook until tender.
  4. In a casserole dish, combine ground beef mixture & cream soup.
  5. Top mixture with tater tots.
  6. Bake , uncovered, for 30-40 minutes till bubbly and Tots are golden brown.
  7. remove from oven & top with cheese, return to oven until melted.
TIPS -
This casserole freezes great!
Just put it together then freeze until ready to bake. (adjust cooking times accordingly)

I always double or triple this one! It re-heats beautifully!
