Crackers as stuffing

"Ritz crackers are a great shortcut for lobster stuffing. 
Some chefs typically bake sliced bread, dry it out, and salt,
 but Ritz crackers offer a great quick and easy alternative. At the restaurant people try to guess what's in the stuffing 
and no one ever guesses Ritz crackers!"
  • ounce(s) unsalted butter
  • small shallot, minced
  • clove(s) garlic
  • package(s) Ritz crackers
  • ounce(s) clean lobster meat
  • tablespoon(s) fine herbs (chives, thyme, parsley, tarragon, celery hearts)
  • Salt
  • Pepper

Hershey’s Cream Cheese Swirl Brownies

Hershey’s Cream Cheese Swirl Brownies
Prep Time: 15 minutes
Cook Time: 1 hour, 10 minutes
Total Time: 1 hour, 25 minutes
Yield: 16-20 Brownies
Ingredients
  • 10 Tablespoons butter
  • 3 ounces Hershey's Milk Chocolate Chips
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla
  • 3/4 cup All Purpose Flour
  • 1/4 teaspoon salt
  • 2 tablespoons Unsweetened Hershey's Cocoa Powder
  • For the Cream Cheese Swirl
  • 8 ounces Cream Cheese, softened
  • 1/3 cup sugar
  • pinch salt
  • 1 large egg
  • 2 teaspoons vanilla
  • Full Sized Hershey Bars, to top
Instructions
  1. Preheat oven to 350. Prepare 8x8 baking pan with parchment paper long enough to hang over on two sides, making it easier to remove from pan once baked. Spray pan and paper.
  2. In small saucepan over medium heat, or in the microwave, melt chocolate and butter until smooth. Allow to cool slightly.
  3. In a separate bowl, beat eggs, vanilla with the sugar. Slowly add in chocolate mixture until well combined.
  4. In small bowl, sift together cocoa, salt and flour. Add mixture to rest of batter. Do not overmix.
  5. Pour batter into prepared baking pan.
  6. !For the Cream Cheese Swirl
  7. Beat ingredients together until smooth. Pour over brownie batter. Use sharp knife to swirl together.
  8. Bake 1 hour to 1 hour 10 minutes, or until just set and toothpick inserted comes out clean. Top with full sized hershey Bars and return to still warm (but off) oven until lightly melted. Allow to cool. Serve with vanilla ice cream, if desired. Enjoy!

Banana Split Brownie Pizza

Ingredients

1 box (1 lb 2.4 oz) brownie mix 
Water, vegetable oil and eggs as called for on brownie mix box 
1 quart (4 cups) favorite flavor ice cream, slightly softened 
1 cup sliced fresh strawberries 
2 medium bananas, sliced (1 1/2 cups) 
1/2 cup chopped fresh pineapple 
1/2 cup chopped pecans 
1/4 cup hot fudge topping 
Whipped cream, if desired 

1 Heat oven to 350° F. Make brownies as directed in medium bar pan (or large bar pan if using Family Size Brownies. 
2. Prepare toppings - Slice strawberries and Bananas using Egg Slicer, Wedge Pineapple with Pineapple Wedger and then Chop with Food Chopper, Chop Pecans with Food Chopper.
3. Bake 20 to 26 minutes or until toothpick inserted 2 inches from center comes out almost clean. Cool completely.
4. 3 Spread slightly softened ice cream evenly over brownies. Freeze at least 1 hour or until ice cream is firm. Just before serving, top with strawberries and bananas; sprinkle with pineapple and pecans. Drizzle with hot fudge topping. Serve wiith whipped cream, if desired.

Pumpkin Cream Cheese Bars

• 1 box angel food cake mix- the 1 step kind
• 1 15oz can Pumpkin 
• 3/4 Cup water
• 1/2 teaspoon cinnamon 
• 1 8oz pkg. reduced fat cream cheese
• -few tablespoons of water, to be mixed with cream cheese

I let the cream cheese soften on the counter for a while then I added it to my stand mixer & beat it with a couple of tablespoons of water until smooth. I just wanted it to thin out a little bit.

In a separate bowl, mix the cake mix, pumpkin, water, & cinnamon together until it is smooth & well mixed.

In a 9x13 pyrex dish- sprayed with PAM- add HALF of the cake –pumpkin mix. Then smooth it out with a rubber spatula. Drizzle half of the cream cheese over the top of it and take a small spatula to smooth it over the top. Add remaining cake-pumpkin mix & also the remaining cream cheese just making layers. Finally take a butter knife- stick it into the mix and go back & forth over the top of the cake making figure “8’s” - to blend it a bit.

Bake for 35 minutes at 375 degrees OR until a toothpick comes out clean.
