Grilled Halibut Bites

grilled halibut bites with pesto recipe

what you’ll need

makes 4 dinner servings or about 3 dozen appetizers
  • 3 cups fresh basil
  • 4 cloves garlic
  • ¾ cup parmesan cheese
  • ½ cup olive oil
  • ¼ cup pine nuts
  • ¼ cup white wine
  • 4 halibut steaks
  • salt and pepper, to taste
  • resealable plastic bag
  • baby spinach leaves (if making appetizer skewers)
  • 36 skewers (if making appetizers)

let’s do it

pesto
  • combine basil, garlic, parmesan, olive oil, and pine nuts in a food processor and mix until smooth
  • reserve ¼ cup of pesto for later use
marinade
  • combine white wine and prepared pesto in a sealed bag and carefully shake to mix
  • add halibut steaks
  • seal and refrigerate for 1 hour
to cook halibut
  • preheat grill to medium-high
  • remove halibut from marinade and place on hot grill, drizzling fish with remaining marinade in bag
  • sprinkle with salt and pepper, to taste
  • grill 4-5 minutes per side (fish is done when it’s opaque all the way through
if serving as dinner
  • brush steaks with reserved pesto sauce and serve
if serving as appetizer
  • cut fish into cubes
  • slide fish onto skewer then skewer each end with 1 spinach leaf
  • brush with reserved pesto sauce

Grilled Pineapple Sundae

makes 6 servings

what you'll need

  • 1 pineapple (cored and sliced into 6 thick rings)
  • 2 teaspoons chili powder
  • 1 tablespoon cinnamon
  • honey
  • vanilla ice cream
  • 1 cup crushed Nabisco gingersnap cookies
  • 6 whole gingersnap cookies for garnish (cut into wedges)

let’s do it

  • combine chili powder and cinnamon in a small dish, set aside
  • core pineapple
  • slice pineapple into 6 rings
  • lightly drizzle honey onto each pineapple ring
  • sprinkle pineapple rings with mixture of chili powder and cinnamon
  • grill pineapple over medium heat on grill or in grill pan for 2-3 minutes per side or until grill marks appear
  • place 1 cup of gingersnap cookies into resealable sandwich bag and roll with rolling pin or crush with hands to create small crumbles
  • place one grilled pineapple ring onto each plate and add one scoop vanilla ice cream
  • top ice cream with gingersnap crumbles and garnish with cookie wedge

Sweet Potato - Black Bean Burger

what you'll need

makes 6 (6 oz.) patties
  • 4 medium sweet potatoes, roasted & mashed
  • 1 can black beans
  • 2 teaspoons of seafood seasoning *** see grilling or seasoning HEADINGS  this blog.
  • ¼ – ½ teaspoon salt to taste
  • ½ teaspoon black pepper
  • 2 egg whites
  • 1 ½ cups panko bread crumbs

let’s do it

  • preheat oven to 350 degrees
  • bake sweet potatoes, then mash
  • combine with black beans and seasonings
  • mix remaining ingredients into bowl of black beans and sweet potato mash
  • scoop generous amount of mix and form into patty
  • pan sear both sides and transfer to parchment lined pan
  • bake in oven 12 minutes or until golden brown
  • assemble burger with arugula, sliced avocado, sliced tomato, feta or goat cheese and bun

Fruit Smoothie Frozen Pack

what you'll need

makes 8 packs
yogurt cubes:
  • 1 cup fresh berries
  • 2 cups plain Greek yogurt (or your favorite flavor)
  • 2 ice cube trays
smoothie packs:
  • 8 cups fresh fruit (pineapple, strawberries, bananas, blueberries, etc.)
  • yogurt cubes
  • 8 resealable bags
smoothies:
  • 1 smoothie pack
  • ½ cup crushed ice
  • 1 cup milk
  • blender

let’s do it

yogurt cubes:
  • place 2-3 berries in bottom of each compartment of ice cube trays
  • fill trays with yogurt
  • place 2 more berries on top of each cube and freeze
  • release yogurt cubes from ice cube tray once frozen
  • place 3 yogurt cubes in each resealable bags
TIP: make extra frozen yogurt cubes to keep on hand for a quick snack
smoothie packs:
  • wash and cut fresh fruit
  • add 1 cup of fruit to resealable bags with yogurt cubes
  • seal bag and lay flat
  • place in freezer until needed
smoothies:
  • remove 1 smoothie pack from freezer
  • empty smoothie pack ingredients into blender
  • add ice and milk
  • blend until smooth
  • pour into glass and drink

Grapefruit Jello

What You’ll Need

  • 4 cups ruby red grapefruit juice
  • 8 packets Knox unflavored gelatin
  • ½ cup Truvia Natural Sweetner or 1 cup sugar
  • 3 cups vodka **** FLAT CLUB SODA or Grapefruit flavored soda
  • 1 cup cold water
  • Grapefruit pieces
  • Raspberries
  • Small saucepan
  • 8″ square baking pan

Let’s Do It

  • Pour grapefruit juice into small saucepan
  • Add gelatin to juice
  • Soak 2–3 minutes
  • Add Truvia or sugar and stir on low heat until gelatin and sweetener have dissolved completely–about 5 minutes
  • Add vodka and water
  • Transfer to baking pan
  • Refrigerate several hours or overnight
  • Cut into rectangles
  • Garnish your jello shots with grapefruit and raspberries and serve
