Hot and Spicy Buffalo Shrimp Dip

Hot & Spicy Buffalo Shrimp Dip - only 3 WW pts, 7g fat... yum!

***I made this a second time without the yogurt and I found I liked it better (less liquid), so I am removing the 1/2 cup of yogurt in the recipe below.


Hot and Spicy Buffalo Shrimp Dip

Ingredients:

  • cooking spray (I used my Misto)
  • 4 oz reduced fat cream cheese, softened
  • 1/2 cup reduced fat sour cream
  • 1/2 cup Franks hot sauce (or whatever hot sauce you like)
  • 1 tsp white wine vinegar
  • 2 cups (12.5 oz) cooked peeled large shrimp, diced
  • 3/4 cup reduced fat Sargento Mexican blend

Directions:

Preheat oven to 375°. Lightly spray an 8 x 8 or 9 x 9 baking dish, or even a pie dish with cooking spray.


Combine the first 4 ingredients together and 1/4 cup of the cheese; mix until smooth.Add the shrimp; mix well and put in a small oven safe dish.

Bake in the oven until hot, about 20-25 minutes.


Remove from oven and top with remaining cheese, bake until melted, about 4-5 minutes.

Makes about 3 cups.

Cheesy Bacon Bombs






What you’ll need for 32 bursting Bacon Bombs:



1 can (8 ct.) Pillsbury Grands Flaky Layers Biscuits
Cubed Mozzarella Cheese (1-1″ cube per Bomb)
2 lbs. of Bacon (1 slice per Bomb)
Sticks

Oil for frying (I used Canola)



Loaded Mashed Potatoes

Prep Time: 20 minutes
Cook Time: 40 minutes



6 cups prepared mashed potatoes
1/2 cup milk
1 (8 ounce) package cream cheese
1 cup sour cream
2 teaspoons parsley flakes
1 teaspoon garlic salt
1 cup shredded cheddar cheese
1/2 lb bacon, cooked and crumbled

Heat oven to 350°.

Mix first six ingredients in mixer on medium speed until smooth and creamy.

Spoon into a greased 9x13-inch pan or casserole dish and sprinkle with cheese and bacon.

Cover with foil and bake for 30 minutes.

Jalapeño Popper Dip




Jalapeño Popper Dip ~ 

6-8 slices of bacon, diced and cooked crispy
2 8-oz packages of cream cheese, soft
1 cup of mayonnaise
4-6 jalapeno's, chopped and deseeded. The seeds will make it fiery hot.
1 cup of cheddar cheese, shredded
1/2 cup of mozzarella cheese, shredded
1/4 cup diced green onion

Topping:

1 cup of crushed crackers ( I used Ritz)
1/2 cup parmesan cheese
1/2 stick of butter, melted


Preheat oven to 350.

Combine all of the ingredients into a medium bowl. Stir well.

Transfer to an oven proof dish. The size of the dish depends on how thick the dip is. The thicker the dip the longer it may need to warm up. I used this stoneware dish that is round and measures 12 inches across. My dip is usually about an inch thick.

Combine the topping ingredients and sprinkle all over the top of the dip.

Bake the dip for 20-30 minutes or until bubbly.

Strategy for Baking.....

Light Brown Sugar: If you don't have light brown sugar, substitute 1 cup granulated sugar plus 1 tablespoon molasses.

Buttermilk: To replace 1 cup buttermilk, place 1 tablespoon vinegar or lemon juice in a cup and stir in enough milk to equal 1 cup. Let stand 5 minutes to thicken.

Baking Powder: Substitute 1/4 teaspoon baking soda and 1/2 teaspoon cream of tartar.

Unsweetened Chocolate: To replace 1 ounce melted chocolate, combine 3 tablespoons cocoa powder and 1 tablespoon tasteless oil, shortening, or butter.

Vanilla Extract: Use the same amount of brandy or an appropriately flavored liqueur.

And remember: Spreads cannot replace butter, margarine, or shortening one for one. Spreads contain less fat and more water, altering the way they interact with the rest of the ingredients.

Batter

1/3 cup cornstarch
1 1/2 cups flour
2 teaspoons garlic, minced
2 teaspoons paprika
1 teaspoon salt
1 teaspoon pepper
24 ounces beer (*lime-lemon soda, or club soda etc if you DON'T LIKE BEER).

4 vidalia onions


Seasoned flour

2 cups flour
4 teaspoons paprika
2 teaspoons garlic powder
1/2 teaspoon pepper
1/4 teaspoon cayenne
Creamy Chili sauce
1 pint mayonnaise
1 pint sour cream
1/2 cup tomato chili sauce
1/2 teaspoon cayenne
Outback Dipping Sauce
1/2 cup mayonnaise
2 teaspoons ketchup
2 teaspoons creamed horseradish
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon dried oregano
1 dash black pepper
1 dash cayenne
Directions:

combine flour, paprika, garlic powder, pepper and cayenne-mix well.

Creamy chili sauce.

combine mayo, sour cream, chili sauce and cayenne-mix well.

Dipping sauce.

Blend everything together well and let sit for 2 hours-refrigerated- or overnight.

The BATTER.
*Mix cornstarch, flour and seasonings until well blended.
*Add beer (soda water/ club  soda/lemon lime soda IF you don't like taste of Beer) and mix well.
*Cut about 3/4 inch off top of onion and peel.
*Cut into onion 12-16 vertical wedges but do not cut through bottom root end.
*Remove about 1 inch of petals from center of onion (You can place the cut onions in cold water for a few hours to help "open" them up -- just make sure that you drain them well).
*Dip in seasoned flour and gently shake to remove excess.
*Separate petals to coat thoroughly with batter.
*Gently place in a fryer basket and deep fry at 375-400 for 1 1/2 minutes.
*Turn over and fry 1 1/2 minutes more or until golden brown.
*Drain on paper towels.
*Place onion upright in a shallow bowl and remove center core with a circular cutter or apple corer.
*Serve hot with chili sauce and dipping sauce.
