Tropical Breakfast Parfaits

Ingredients

  • 1/2 cup pineapple, diced
  • 1/2 cup mango, diced
  • 2/3 cup kiwi, diced
  • 2 cups vanilla or coconut yogurt
  • 2 cups granola, homemade or store bought
  • 1/2 cup coconut, toasted

  •  In a small bowl, combine the three fruits. Stir until evenly distributed. Set aside.
  • To assemble: place 1/4 cup granola in each of 4 clear glasses (juice size or dessert dishes).
  • Then, top the granola of each cup with 1/4 cup yogurt.
  • Next, add two spoonfuls (soup spoon size) of fruit on top of the yogurt. Sprinkle with toasted coconut.
  • Repeat steps 2-4 until cups are full and all the ingredients are used up, ending with fruit and coconut for a pretty presentation.
  • If desired, you can add chopped macadamias on top as well.
  • Enjoy immediately!

Ingredients
  • 16 frozen white dinner rolls (Rhodes brand)
  • ½ C butter, melted
  • 1 C grated Parmesan cheese, divided
  • 1 tsp dry parsley flakes
  • 1½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp Italian seasoning
  • ½ tsp onion powder
Instructions
Remove frozen rolls from freezer and loosely wrap them in plastic wrap and allow to sit at room temperature for 45 minutes.
Cut rolls in half with a clean pair of scissors.
Combine melted butter and seasonings together.
Pour over dough and gently mix.
Add ½ C of grated cheese and combine.
You want each piece of dough to be coated.
Line the bottom of a 9 inch spring form pan with the piece of dough and then top with remaining grated cheese.
Allow to rise in a warm place for 1½ – 2½ hours.
Cover bottom of pan with foil to prevent butter from leaking out.
Bake at 350 for 20-25 minutes or until center is completely done.

    Ingredients

  • 1/4 cup diced white onion
  • pound ground beef
  • (1.25 ounce) package of Old El Paso taco seasoning mix
  • cups Bisquick mix
  • 1/2 cup water
  • (15 ounce) can black beans, drained
  • cups shredded cheddar cheese
  • optional toppings: sour cream, diced tomatoes, cilantro, onion, salsa

 

Directions

  1. 1Preheat the oven to 375 degrees. Spray 12 muffin cups with cooking spray.
  2. 2Brown beef in a skillet and drain the fat. Add the taco seasoning mix and water called for on the package and simmer for 4-5 minutes. Set aside.
  3. 3In a medium bowl mix the Bisquick and water until blended. The mixture will be thick and the texture of pizza dough. Press 1-2 tablespoons of dough in the bottom of each muffin tin and press slightly up the sides.
  4. 4Spoon about 1-2 tablespoons of taco meat over the top of each dough filled tin. Next spoon about 1-2 teaspoons of black beans over the taco meat in each of the muffin tins.
  5. 5Bake for 6-8 minutes and remove from the oven. Distribute the 2 cups of cheese over all 12 muffin tins evenly and put back in the oven to bake for 1-2 minutes or until cheese is melted.
  6. 6Remove pies from tin and top with your favorite taco toppings (i.e. sour cream, diced tomatoes, onion, cilantro, and salsa)

    Ingredients

  • lb lean (at least 80%) ground beef
  •  large onion, chopped (1 cup)
  • tablespoon Worcestershire sauce
  • teaspoon garlic salt
  • cup shredded Cheddar cheese (4 oz)
  • 1/2 cup milk
  •  1/2 cup Original Bisquick® mix
  •  eggs
  • 12  mini kosher dill pickles
  •  medium tomato, chopped
  • Ketchup and mustard

    Directions

  • 1Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
  • 2In 10-inch skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Cool 5 minutes; stir in Worcestershire sauce, garlic salt and cheese.
  • 3In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup burger mixture. Spoon 1 tablespoon baking mixture onto burger mixture in each muffin cup.
  • 4Bake about 30 minutes or until toothpick inserted in center comes out clean, and muffin tops are golden brown. Cool 5 minutes. With thin knife, loosen sides of muffins from pan; remove from pan and place top side up on cooling rack. Cool 10 minutes longer, and serve with garnishes.

Gold Jello Coins

What You’ll Need

  • Jell-O Gelatin Dessert, Island Pineapple flavor
  • Unflavored gelatin powder
  • Large glass baking dish
  • Cookie cutter
  • Vegetable oil spray

Let’s Do It

  • Prepare the jello per box instructions and pour into a large glass baking dish to create a 1″ thick layer. To make the jello stiffer and more moldable, you might want to add a few pinches of gelatin powder before pouring into the dish
  • After the jello has set, use the cookie cutter to punch out the coins
  • If the cookie cutter starts sticking, hit it with some vegetable oil and then wipe way any excess oil

What You’ll Need

  • Several large russet potatoes
  • A variety of veggies such as black olives, broccoli, radishes, cucumbers, carrots (both full-sized and baby), Brussels sprouts, green onions and red bell peppers
  • Lots of toothpicks

Let’s Do It

  • Clean and wash your potatoes and then slice off just enough of the bottoms to allow them to stand up straight
  • Chop and slice your pre-washed veggies and place in separate bowls arranged around the table
  • Set potatoes and toothpicks around the table
  • Using the toothpicks, pin the veggies into place to assemble the potato face
  • Don’t let the potatoes go to waste, bake them as usual and enjoy

what you’ll need

makes 18 nests with eggs
  • 1 bag frozen or refrigerated hash brown potatoes
  • vegetable oil
  • 18 eggs
  • 1 teaspoon Dijon mustard
  • ¼ cup water
  • ¼ cup light olive oil
  • 2 teaspoons paprika
  • salt and pepper to taste
  • fresh dill

  • divide hash browns into individual servings
  • cook hash browns according to package instructions

  • place eggs in single layer in large pot
  • fill pot with cold water until eggs are covered by about 1″
  • bring eggs, uncovered, to a rolling boil
  • remove pot from heat after boil is achieved and cover tightly with lid
  • set timer and allow eggs to sit, covered, 13 minutes
  • carefully remove eggs from pot and place in bowl of ice water to cool
  • let cool completely, then remove shells
  • cut top 1/4 of egg off
  • carefully remove yolk and rinse out egg whites
  • in bowl combine egg yolks, mustard, water, oil, paprika, salt and pepper; stir until smooth; spoon into piping bag
  • pipe egg yolk mixture into egg whites
  • place egg bottoms into hash brown nests; garnish with egg top and fresh dill

What You’ll Need

Makes approximately 6 sheep
  • 1 tablespoon butter
  • 1 1/3 cups mini marshmallows (plus additional for assembly)
  • 2 cups either multi-grain and chocolate Cheerios (depending on desired sheep’s color)
  • White or dark chocolate chips
  • Pretzel sticks
  • White and dark chocolate coated almonds (or Whoppers if you don’t like nuts)
  • Toothpicks

Let’s Do It

Sheep’s body:
  • Melt 1 tablespoon of butter; add marshmallows and stir until melted
  • Remove from heat and add 2 cups of Cheerios, mix together
  • Spoon out heaping tablespoon of mixture and use lightly greased hands to mold into egg-like shape
  • For legs, melt white or dark chocolate chips to use as glue; break pretzel sticks to ¾” lengths and attach to sheep’s body
Sheep’s head:
  • Apply small amount of melted chocolate and press into end of body
  • For ears, cut mini marshmallows into small pieces and use melted chocolate to glue them on top of head
  • For eyes, dip toothpick into melted chocolate and add two dots to face

What You’ll Need

Makes 6 pots (plus additional strawberries)

Let’s Do It

  • In food processor blend Oreos into crumbs; set aside
  • Make pudding according to package instructions; set aside
  • Place melting wafers in small metal bowl
  • Place water in small saucepan and bring to boil; lower water temperature to medium-high and set metal bowl with melting wafers on saucepan, making sure water is not touching bottom of bowl; melt wafers while stirring constantly
  • Dip strawberries in melted chocolate, remove excess back into bowl and transfer to a parchment-lined plate; place in refrigerator until chocolate is set
  • Pour remaining melted chocolate in piping bag with narrow tip; drizzle lines over strawberries to simulate growth rings on carrots
  • Line pots with food-safe parchment paper (or insert small cup); fill with alternating layers of Oreo crumbs and chocolate pudding, ending with Oreo crumbs on top
  • Add “carrots” and enjoy

Plan on sacrificing a few strawberries while you perfect your technique. You can always eat the rejects.

makes 12–15 nests
  • 6 cups mini marshmallows
  • 6 ounces semi-sweet chocolate chips
  • 1 1/2 cup Nutella  ****can also use sunflower type butter (peanut butter)
  • 1 cup creamy peanut butter *** can use sunflower butter ***
  • 1 box Fiber One cereal
  • 36 mini Cadbury eggs

let’s do it

  • fill medium saucepan 1/3 full with water; bring to boil
  • put marshmallows in medium-sized bowl and set over boiling water; stir constantly until marshmallows begin to melt
  • add chocolate chips, Nutella and peanut butter to mixture; stir until completely melted and remove from heat
  • add cereal immediately to mixture and combine thoroughly
  • take approximately ¼ cup of mixture when cool enough to handle; mold with lightly greased hands into nest shape
  • let nests harden in refrigerator for 30 minutes
  • add Cadbury Mini Eggs

  • ½ / 1 tablespoon butter, divided
  • 1/4 cup Panko breadcrumbs, seasoned or plain
  • 1 teaspoon finely chopped parsley (1/2 teaspoon dry)
  • 1/2 teaspoon salt
  • 2 cups uncooked elbow macaroni
  • 1 egg, beaten
  • 2 cups shredded Monterey Jack cheese, divided into single cups
  • 1 cup shredded sharp cheddar cheese
  • 3-4 strips bacon, cooked crisp and crumbled
  • 1 teaspoon Dijon mustard (optional)
  • 1 cup whole milk

let’s do it

  • preheat oven to 350 degrees
  • grease muffin tin with nonstick cooking spray
  • sauté ½ tablespoon of butter with panko crumbs until golden brown
  • stir in parsley and set aside
  • bring large pot of lightly salted water to a boil
  • add macaroni and cook according to package instructions until al dente
  • remove from heat, drain and return to pot
  • stir in remaining butter and egg until pasta is evenly coated
  • add remaining cheeses (reserve 1 cup of Jack cheese), bacon, mustard (optional) and milk
  • spoon into muffin tin
  • sprinkle with reserved cheese and bread crumb mixture
  • bake for 30 minutes or until top is golden brown
  • allow muffins to cool slightly before removing from pan and serving

Cheesy Pepperoni Twist Rolls

Cheesy Pepperoni Twist Rolls

Ingredients

1 pkgfrozen bread dough
1 pkgpepperoni
1 pkgmozzarella cheese
1parmesan cheese
1olive oil
1italian seasoning
1/4 ctomato sauce, optional
8 slicebacon
1 smallonion diced finely



Directions

 Loosely cover the frozen bread dough with plastic wrap. Allow the dough to thaw for a few hours at room temperature. When the dough is completely thawed it will be slightly puffed up.

Here's a tip: Spray the plastic wrap with cooking oil, or brush it with cooking oil and lay it, oiled side down on the bread dough. This allows the bread dough to rise and move easily under the plastic wrap without it sticking or holding back the dough. Cook and crumble bacon.

Roll dough out to an approximately 11 x 11 inch square. One frozen dough log makes one pepperoni roll.

Brush dough with olive oil or whatever cooking oil you prefer. Lay pepperoni on the dough covering entire surface. Sprinkle with shredded mozzarella cheese.

Next, sprinkle it with shredded Parmesan cheese and lightly sprinkle it with Italian seasoning. Add a sprinkling of garlic salt (optional).and add crumbled bacon and finely diced onion if so desired.

Roll up the dough starting at one edge of the square.
Place rolls on baking sheet, leaving space between them if you are making more than one roll. Brush some melted butter on top of the uncooked pepperoni roll(s).

 Bake at 375 degrees F for approximately 15 to 25 minutes. Oven temperatures and times may vary. When done, the top of the rolls should be golden brown and you should be able to make a tapping sound on the crust with your fingernail (the same as when baking bread).

Make sure you allow your pepperoni roll to cool completely before slicing and serving it.

Freezer Fruit Yogurt Pops

Ingredients:

    1/4 cup fresh sliced strawberries
    1 kiwi peeled and coarsely chopped
    1/4 cup blueberries
    1 tablespoon honey
    1 cup vanilla flavored yogurt

Makes:
8 servings

    Large mixing bowl
    Spoon

    Lollipop Sticks
 

Instructions:
Step 1
In large bowl, combine strawberries, kiwi, blueberries, honey and yogurt.
Spoon mixture into 8-cavity Silicone Brownie Mold.
Freeze 20 minutes; insert lollipop sticks.
 Freeze until firm, about 3 hours.
