Make Your Own Flavored Popsicles

Key Lime Pie Popsicles

2 cans organic coconut milk or whole milk
Juice & zest of 1 lime
3 TBS. honey
pinch of salt
1 c. chopped macadamia nuts

Directions: Mix coconut milk, lime juice & zest & honey in a blender/food processor. Pour into popsicle molds or cups and freeze for 6+ hours. Before eating remove from mold & roll in chopped nuts.


Peach Lavender Pops

10 peaches
2 TBS. honey (more if your peaches aren't that sweet)
4 sprigs of fresh lavender

Directions: Mix peaches and honey in a blender/food processor. Add the leaves from the sprigs of lavender & stir with a spoon. Pour into popsicle molds or cups and freeze for 6+ hours.


Banana Colada Pops

4-5 bananas
2 cans of organic coconut milk
1/2 tsp. pure vanilla extract
1/2 tsp. sea salt
1 c. chocolate chips (preferably soy-free like these)
1/2 c. coconut flakes

Directions: Mix bananas, coconut milk, vanilla, & salt in a blender/food processor. Blend till mixed.  Toast coconut flakes in a pan over medium heat for about 5 min. Pour liquid mixture into popsicle molds, top with toasted coconut, and freeze for 6+ hours. Before eating, slowly melt chocolate chips in a glass bowl over a saucepan of boiling water, then dip into chocolate and freeze for 5 minutes.


Strawberry Shortcake Pops

6 cups fresh or frozen strawberries
3 cups organic vanilla full-fat yogurt (or buy plain and add some honey & vanilla)
1 cup macadamia nuts, chopped

Directions: Mix strawberries in a blender/food processor. Layer yogurt and pureed strawberries in popsicle molds and freeze for 6+ hours. Remove from molds and roll in macadamia nuts.


Cucumber Mint Pops


4 cucumbers
2 sprigs of fresh mint
1 squeeze of fresh lime juice
3 TBS. honey

Directions: Mix cucumbers in a blender/food processor. Strain pureed cucumbers through a strainer. Mince 6-8 mint leaves and blend with strained cucumber "juice". Add squeeze of lime juice & honey. Place a mint leaf in each popsicle if desired. Pour in popsicle molds and freeze for 6+ hours. 


Lemon Meringue Pie Pops


6 eggs (farm fresh is best)
1 c. organic cane sugar (I usually buy in bulk) or coconut sugar
2/3 cup fresh lemon juice
1 TBS. lemon zest
8 TBS. butter (organic is best, I LOVE kerrygold butter)
1/2 cup cream (organic is best)
1/4 cup organic cane sugar or coconut sugar

Directions: In a glass bowl over a saucepan of boiling water, whisk eggs, 1 c. sugar & lemon juice. Stir constantly until temperature reaches 160 degrees. It should be nice and thick by now. Remove from heat and mix in lemon zest & butter.  With a mixer, mix on high cream & sugar until whipping cream forms. Layer the lemon curd & whipping cream, then pour in popsicle molds and freeze for 6+ hours.


Fudgesicle Pops


2 cans coconut milk or whole milk (organic or raw is best)
1/2 cup cream (organic or raw is best)
4 TBS. cocoa
8 TBS. honey (more if you need it sweeter)
1/2 tsp. vanilla
1/2 tsp. salt

Directions: Mix all ingredients in a blender/food processor. Pour in popsicle molds and freeze for 6+ hours.


Orange Rosemary Pops


6 fresh oranges
3 sprigs of fresh rosemary

Directions: Juice the oranges. Add the leaves from the sprigs of rosemary and pour in popsicle molds and freeze for 6+ hours.


Berry Cheesecake Pops


2 cups (16 oz.) cream cheese, my fav here
4 TBS. whole milk (any kind you like)
6 TBS. maple syrup
5 cup. of any mixed berries

Directions: Puree mixed berries in blender. Pour in a bowl and set aside. Blend cream cheese, milk & maple syrup. Fold the berry mixture into your cream cheese mixture and pour in popsicle molds and freeze for 6+ hours.


Root Beer Float Pops


4-5 natural cane sugar root beer soda (like this one)
1/2 c. cream
2-4 TBS. organic sugar or coconut sugar

Directions:  In a mixer, blend whipping cream while adding sugar until whipped cream forms. Drop spoonfuls of whipping cream in popsicle mold & pour rootbeer soda on top. Freeze for 6+ hours.
