Mint Jelly Recipe
Pick leaves from a mint plant.
Candy Cane Mint flavor plant is what I have.
Use about 1 - 1 1/2 cup packed full of leaves.
Wash very well in strainer. Make sure any soil, etc if OFF leaves.
If I soak the leaves to wash them I use a large bowl & put the strainer on top w/ the leaves in the strainer. Drain water and repeat about 3 times until water
is clear.
I never soak food in my sink, even though I clean it w/ bleach.
In large pot bring 2 1/4 cups of water to a boil, then add mint.
Bring to a boil over medium high heat.
Remove from heat, cover and let steep for 10 minutes.
Drain off liquid using a strainer or cheesecloth into a large glass measure.
Let drip until you have 1 3/4 cups of mint flavored liquid.
In a clean deep stainless steep pan combine mint flavored water,
2 tbsp. lemon juice,
3 1/2 cups of sugar.
Bring to a rolling boil over high heat.
Add 1 pouch of liquid pectin stirring constantly.
Boil hard and stir for 1 minute.
Add a few drops of green food coloring.
Remove from heat and skim off foam on top using a large slotted metal spoon.
Pour mixture in 8 already processed sterilized jars.
I used the mini jars instead of the 8 ounce jelly jars.
Wipe off rim of jar with clean cloth and place sterilized jar lids, screw on tops.
Water bath process jars for 10 minutes at a full boil.
Remove from water and cover with a dish towel. Let sit for 24 hours before moving.
