St Patricks Day Lunchbox


Ham and cheese and spinach tortilla sandwich (multiple layers of each) cut with a shamrock cookie cutter.  She also had pretzel twists, cucumbers, cheese stick and strawberries.

Lunchbox #6



In this lunch:
  • Fruit kebabs of blueberries, raspberries and cantaloupe on sword toothpicks I bought at Walmart
  • Veggie Sticks - Snyder's EatSmart Naturals Garden Veggie Sticks - my girls love them AND they are lower in sodium than so many of the other brands out there. LOVE these veggie sticks!!
  • Uncrustable: Nature's Own Whole Wheat Bread stuffed w/ peanut butter and Smuckers Simply Fruit Seedless Blackberry Spreadable Fruit 
  • Peeled Snacks' deliciously crunchy Apple Clusters - be sure to try Berry Crunch Apple Clusters!!

(adapted from “Ready Made” and a few other sources)

8 oz extra-sharp cheddar cheese, coarsely shredded
½ stick unsalted butter, room temperature
1 tsp. kosher salt
1 c flour
2 T water, iced

1.      Cream the cheese, butter, and salt until combined. Add the flour until it looks like the above. Then, slowly add the water until the dough forms a ball. It may take 15 seconds or so for the dough to make the ball after you add the water so be careful not to add much more (I added a T. more).
2.      Pat the dough in a disk and put in the fridge for an hour. Then, roll out the dough until it’s 1/8 of an inch.
3.      Preheat the oven to 375 degrees.
4.      Cut them in 1″ squares. You can see by the lines that i let my kids help cut them out. They LOVED the pastry wheel.
5.      Poke a hole in them with a chopstick and bake for 12 minutes.

Happyvballgirl notes:
- I used Mexican shredded cheese - just couldn’t handle the bite of the sharp cheddar.
- I skipped the refrigerate dough part – out of impatience and I found it way easier to roll out and didn’t stick too much.
- If you want them crispy, roll them flat. Like super flat! Like really flat! Like even less than 1/8” otherwise they’ll be a bit chewy. Which is fine warm but once they cool off, that ain’t great. Do a test batch! 


Recipe

Chocolate Chip Cookies
Yield: 
4 dozen cookies
Ingredients: 
11 1/2 ounces Ghirardelli Semi-Sweet Chocolate Chips 
1 cup butter or margarine, softened
3/4 cup sugar
3/4 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla
1/4 cups unsifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup walnuts or pecans, chopped (optional)
Directions
Heat oven to 375ºF.
Stir flour with baking soda and salt; set aside. In large mixing bowl, beat butter with sugar and brown sugar at medium speed until creamy and lightened in color. Add eggs and vanilla, one at a time. Mix on low speed until incorporated. Gradually blend dry mixture into creamed mixture. Stir in nuts and chocolate chips. Drop by tablespoon onto ungreased cookie sheets. Bake for 9 to 11 minutes or until golden brown.
Note: The 11 1/2 ounces of Semi-Sweet Chocolate Chips can be substituted with any variety of chip flavor (i.e.- Milk Chocolate Chips, 60% Cacao Bittersweet Chocolate Chips, etc.)

Lunchable Santa


We packed Santa Grilled cheese sandwiches  with orange slices, popcorn and a Trader Joe's dye-free candy cane cookie and one mini chocolate Santa Claus! They are also bringing ice water and a drinkable yogurt.

Santa Sandwiches but this time with lettuce, mustard and chicken.


Lunchbox Christmas Idea








For all those of you that have not tried the spring loaded cookie stamps on bread yet: It is fun, easy and worth it! They come out great and I will look for more shapes as the holidays end and the new year begins. I found these at my local Target.


We packed a chicken cold cut and lettuce sandwich Christmas tree, a Gingerbread family and strawberries. Can you spy the little Santa chocolate I hid? We also packed ice water and a drinkable yogurt.


This is a ham and cheese grilled cheese on a English muffin with pretzels and strawberries. There is also a babybel cheese with a Christmas Tree cut out and a mini Santa chocolate :)

{Recipe}

4 large eggs
1 Tablespoon milk
1/2 teaspoon of cooking oil

{Instructions}

First, I scrambled the 4 large eggs with 1 tablespoon milk in a small bowl. Meanwhile I heated a small amount of oil in a medium size pan. Once the pan was hot, I added the egg and turned the heat to low. I cooked the egg until the egg was set, turned it over once and made sure it was cooked properly. I then let it cool on a cutting board and used a cookie cutter to cut the egg in shape.

 Breakfast for Lunch Box


Day Off School Lunchbox
We packed a very silly monster apple, a cereal bar (decorated with two chocolate chips and a half a mini peanut butter cup), rotten monster fish with worms and a creepy yogurt.


Today's lunch includes strawberries, blueberries, vanilla yogurt and a snowman sandwich decorated with mini chocolate chips, a tiny carrot and a winter hat cupcake topper. I added popcorn snow and cheese snowflakes for a snowy lunch!


We packed Pirate Booty, a peanut butter and jelly sandwich, a dye-free yogurt and some strawberries.

First grader chose vanilla yogurt, oranges, carrots and apples, a yogurt cereal bar and half a pretzel bagel with cream cheese for lunch today. I added a chocolate heart as a special treat for today as well. He has ice water in a thermos packed in his lunch bag, too. I love that this lunchbox has so many small compartments! My son felt overwhelmed with the bigger lunchboxes and he loves this 6 compartment box. Less food more choices.


The kids got to choose their own lunch today and so we ended up with jelly sandwiches on whole wheat bread and a small container of Cinnamon Almonds in the lower part of this bento box. In the upper part are garden cucumbers with carrot stars, three fun sushi shapes with nori faces and left over chicken fingers on salad greens. The sushi shapes are easy to make with a sushi mold and I used a nori punch for the facial expressions.

Save all my bread scraps in a freezer bag in my freezer and once it is full  cut all scraps into cubes and make French Toast Casserole :)   *bread crumbs in food processor once the bread has dried, I don't freeze mine*

Lunchbox Puzzle



Puzzle Sandwich here is PB&J. I used salted sunflower seeds in my food processor (only nut we
know our son ISN'T allergic too) and added Marionberry jelly. IT was a huge hit. WE are homeschooled
but I make sure my son with Autism feels like he's IN school!


Older kids Idea shows Turkey Sandwich.


Packed our first lunch in it today. I packed my first grader some of the new yogurt tube, apple bunnies, cinnamon almonds, two mini chocolate chip cookies, two bear peanut butter and honey sandwiches, carrots and a few chocolate chips. He also has ice water.

Lunchbox Ideas #2


Nut Mix, Oranges, Pepperoni-Lettuce (spinach in our home)-Tomato sandwich.




Energy balls, a cereal bar cut in half, apple slices and some mini carrots, oranges and the same home made trail mix plus the three cupcake rings.



 
Trail mix, energy balls, carrots as well and a chicken with salad wrap.



 Snack mix (unsalted peanuts, white and dark chocolate chips), oranges, energy balls and three pitas filled with carrots, salad and turkey. Nestled on top are two small containers filled with mayo. We also packed a drinkable yogurt and ice water today.


Lemon edamame, crackers and cheese and some apples.


No bake energy bites, all natural apple sauce and a chicken, mustard and salad sandwich with a Chobain. Packed ice water and a small orange juice.







Ingredients:
(it makes about 50 - 70 mini energy bites)

2 cups oatmeal
1 cup peanut butter 
2/3 cup honey
1 cup coconut flakes
1 cup ground flaxseed
1 cup mini chocolate chips
1/2 cup of sliced almonds or 1/2 cup of dried fruit.
